Upside down banana (sugarfree)
Ingredients
- 100g light butter softened
- 1/2 cup natvia
- 3 eggs
- 1 cup S.R Flour (200g)
- 1/2 cup almond meal (75g)
- 1tsp vanilla
- 1tsp bicarb
- 1tsp cinnamon
- 200g @yoproau vanilla yogurt
- 3 ripe bananas ( one and half for the bottom, the rest for mix) (270g)
Method
- Grease and like a square baking dish. Slice 2 bananas lengthways and place flat side down in the baking tray
- Mash remaining bananas
- beat butter and sugar together until light and fluffy add in 1 egg and a time, beat well after each addition
- Stir in flour, almond meal, bicarb, cinnamon and banana, then stir in yogurt until just combined
- bake on 160 fa forced for 30-40 mins or until springing back when touched in the middle
- Cut into 18 slices
